סשימי סלמון
הפעם הראשונה שטעמתי, הייתה במסעדה צרפתית-יפנית במלון הולידיי אין בת"א, כשהייתי בן עשר. מאז הקשר שלי עם סושי רק הולך ומתחזק מדי חודשיים שלושה כשאני מכין לעצמי מנה חדשה מעולם הסושי. השבוע הכנתי סשימי.
סשימי, זה למעשה נתכים של דג נא, בצירוף אורז מוחמץ. הרעיון דומה מאוד לסושי ניגירי, רק שבסשימי, נתכי הדג מאסיבים יותר, והאורז אינו מוצמד אלא מוגש לצד הדג. סשימי מאפשר להנות הרבה יותר מהטעם המאוד מובחן של הדג מבלי להאפיל עליו עם אורז ואצה. מיותר לציין שהדג חייב להיות מאוד מאוד טרי כדי שניתן יהיה לצרוך אותו נא מבלי לסבול מתופעות לוואי לא נעימות, וכן כדי להינות מהטעם המצויין בו ניחן הסלמון אך ורק כשהו טרי.
את הדג קניתי אצל פנצטר, בשוק הכרמל 25. אני קונה שם לא מעט, ותמיד מרוצה מהדג. בשביל סלמון טרי באמת כדאי להגיע בימים ראשון עד רביעי, ואפשר למצוא שם עד הפתעות לחובבי הז'אנר כמו שרימפס וקלמרי טריים מיפו. את נתח הדג ביקשתי לקבל כמו שהוא, כי רציתי לעשות את העבודה בעצמי ולבחון על הדרך את סכין הדגים החדש שלי, אך למי שמעוניין לצמצם את כמות העבודה מומלץ לבקש את הסלמון בנתח פילה; ללא עור וללא עצמות.
