קנלוני במילוי תרד
את המתכון הבא פיתחתי עבור יעל הצמחונית, אשר זקוקה בדחיפות ובתכיפות למנות עשירות בברזל, וכמובן שהייתי חייב כבר זמן רב לעשות שימוש בפסטה מסוג קנלוני שהמתינה בסבלנות עד אין קץ על המדף במטבחון שלנו.
מרכיבים
- 500 גרם תרד מקופסא
- חצי חבילה של קנלוני (של ברילה)
- 5 שיני שום
- בצל אחד בגדול בינוני
- טחינה
- עלי בזיליקום טריים
- גבינת עמק ו\או גבינת עיזים
התרד
השתמשתי בחצי מכמות התרד שהגיע במארז, שהם 500 גרם. עם מעט מים מפשירים על גבי מחבת. לאחר שהופשר התרד ניתן להוסיף את הבצל והשום. לבלילה המוזרה הזאת הוספתי טחינה כדי להעשיר את הטעם והמרקם, אך באותה מידה (רק מכיוון אחר) ניתן להוסיף גם חמאה ו\או חלב.
המילוי
עכשו מגיע החלק המסובך. מניחים את הקנלוני במאונך, כאשר קצהו האחד טבול קלות בתרד, וממלאים באמצעות כף מן הצד השני עד שכל הקנלוני מלא בבלילת תרד. חשוב מאוד לא להרים את הקצה התחתון של הקנלוני מהבלילה כל מהלך המילוי, שאם כן, כל המילוי יצא בבת אחת.כעת כשהקנלוני מלא, יש להעביר אותו בזהירות לתבנית שבמקרה הכינותם מראש. במהלך ההעברה יש להיזהר ביותר שלא ישפך המילוי. כדי להעביר את הקנלוני לתבני מבלי לאבד את המילוי יש תחילה לסגור באמצעות כף, או כף היד, את קצהו התחתון של הקנלוני, ורק אז להעבירו לתבנית. כאשר יונח במאוזן, אין חשש לאובדן המילוי.
הלמעלה
מלמעלה פיזרתי מעט עלי בזיליקום טריים (שיעל הגננית גידלה), גבינת עמק וגבינת עיזים (פרומעז) מגורדות.
בישול
190 מעלות צלזיוס בתנור למשך כרבע שעה.
