קלמרי טמפורה
הקלמרי, חברו הטוב של הסושי וכוכב המשנה לצד אדממה וכוס הבירה החל לאחרונה מבצבץ בתפריטי הפאבים כמו מדוזות על החוף. חצי קילו טבעות קלמרי יעלה לצרכן התל אביבי הממוצע 21.90 בטיב טעם, פלוס מצרכים נוספים שרצוי להחזיק בבית כמו אבקת טמפורה ושמן טיגון. חישוב קל מעלה שהעלות של מנה צנועה שכזו בפאב משתווה בערך לעלות הכנה של חצי קילו, מינוס הסיפוק הקולינרי המלא שבהכנה.

מצרכים
- חצי קילו טבעות קלמרי
- אבקת טמפורה
- שמן טיגון
- מקלות סינים מעץ (בלי ציפוי..)
- מיונז, צ'ילי מיובש, ושמן שומשום (למטבל)
פרה-הכנה
את טבעות הקלמרי יש להפשיר מראש במקרר (או ברגע האחרון בקערה עם מים). לפני שמתחיליםבמלאכה, כדאי להכין מראש קערה גדולה מדופנת בנייר סופג כדי לקלוט את הקלמרי המטוגן.
המטבל
אני בחרתי במטבל של מיונז עם צ'ילי ושמן שומשום. בקערה, מערבבים מעט צ'ילי מיובש עם מעט מים רותחים כדי לייצא את החריפות מהצ'ילי, מוסיפים כשתי כפות מיונז וכמה טיפות של שמן שומשום. רוטב טריאקי,ברביקיו וצ'ילי מתוק יכולים להתאים באותה מידה.

הטמפורה
מערבבים חצי כוס אבקת טמפורה עם רבע כוס מים עד קבלת בלילה אחידה. יש שחשיבות גבוהה למידת הסמיכות של הבלילה: אם הבלילה דלילה מדי, היא לא תצמד די הצורך לטבעות הקלמרי, ואם סמיכה מדי, הציפוי יהיה עבה מדי ועשוי שלא להיטגן די הצורך. כדאי להתחיל עם טבעת אחת לניסוי, לטעום ולהחליט אם לדלל או לעבות את הבלילה.
זאת ההזדמנות להזכיר שהחשיבות של הטמפורה היא כפולה:
- הטמפורה יוצרת ציפוי פריך מסביב לטבעות הקלמרי.
- פירות ים בכלל וקלמרי בפרט דורשים בישול מהיר כדי לא לאבד מאיכותם, וציפוי הטמפורה דואג לכך במידה לא מבוטלת.
טיגון קלמרי עד להזהבה
התיכלוס
מחממים שמן עמוק בסיר קטן – או צ'יפסר, כדי לבדוק מתי השמן מספיק חם אפשר להתיז מעט טמפורה פנימה – אם השמן קופץ אפשר להתחיל. מטבילים כמות נכבדת של קלמרי בבלילית הטמפורה, יש לוודא כיסוי מלא של הטבעות בטמפורה, ולהעבירם אחד אחד באמצעות מקלות העץ אל סיר השמן. הטיגון עצמו, בתנאים אופטימלים אורך כ20-40 שניות, בהתאם למידת החום, עד להזהבה של הציפוי. טיגון יתר על המידה של הטבעות יגרום לקלמרי להיות יבש ובלתי לעיס, ולכן יש להקפיד להוציא את הטבעות בזמן. באמצעות מסננת קטנה מוציאים את הטבעות, מנערים קלות את השמן, ומשליכים אל קערת הנייר הסופג. מאחר וזאת מנה מטוגנת, מומלץ בחום לא לחכות ולהגיש מיד, זה טעים רק כשזה חם.
