חומוס אמיתי
המרענן הרשמי של המזרח התיכון זכה למקום של כבוד במטבח שלי השבוע.
לאחר שנמאס מחומוס קופסאות, על תפלותו וחומריו המשמרים, הוחלט בצוות הבית להכין חומוס אמיתי ממרכיבים אמיתיים בלבד.
אז ככה נראה חומוס!
מרכיבים
- 500 גר' גרגירי חומוס
- טחינה גולמית
- לימון אמיתי
- פטרוזיליה (מומלץ!)
- 3-4 שיני שום
- תבלינים: מלח, פלפל שחור, כמון וזרעי כוסברה
השרייה
את גרגירי החומוס היבשים יש להשרות 24 שעות לפני השימוש. הסברה הרווחת גורסת כי "הפלוצים יוצאים במים". מילה של המלצה, אל תצפו שכ-ל הפלוצים יצאו במים. במהלך 24 השעות הבאות, החומוס יתנפח בערך פי שניים מגודלו המקורי, ולכן כדאי להשרות בכלי גדול מספיק, ולמלא מים גבוה יותר מגובה החומוס בכלי.
בישול
יש לסנן את החומוס ממי ההשרייה, ולבשל על אש בינונית למשך כחצי שעה, או עד שהחומוס מתרכך. במהלך הבישול יווצר קצף לבן על פני המים, אותו יש לסנן החוצה עם כף. ברגע שהחומוס נהיה רך, אפשר לסנן ולעבור לשלב הבא, אין צורך בקירור.
בלינדור
פשוט מאוד, להניח את כל המרכיבים יחד בבלנדר, ולקצוץ לפי מידת הדקות הרצויה של העיסה. אני אישית בחרתי בגיסרה הירושלמית, המצומצמת יותר בגריסת הגרגרים לשמירה על הערך המקורי של החומוס. לפני הבלינדור, יש להוסיף לכל המרכיבים כשלושת-רבעי כוס מים רותחים. כמות המים כמובן משתנה לפי דרגת הסמיכות של החומוס שאתם מעוניינים לקבל – עדיף להתחיל עם פחות מים ולהוסיף במהלך הבלינדור. מומלץ להשאיר כמות קטנה של גרגרים שלמים, כדי לעטר איתם את המנה מאוחר יותר.

הגשה
חלק בלתי נפרד מההכנה, הוא להגיש את החומוס בצורה אסטתית. באמצעות כף מזיגה יש להעביר את החומוס לקערה, וליצור גומה במרכז. את הגומה יש למלא בגרגירי החומוס אותם לא בלינדרתם, ולמעלה אפשר לבזוק מעט פטרוזיליה, שמן זית\לימון ותבלינים.
