Coolness all around 
הסיפור של המתכון הבא, כמו מתכונים רבים לפניו, מתחיל בנסיעה של חברתי לחיים יעל לביקור אצל הוריה בקרית אונו. נסיעות אלה תמיד מעשירות את הדמיון הקרניבורי שלי מאחר ויעל צמחונית ומתנגדת נמרצות לבישולי דגים במטבח המשותף שלנו, אבל, זה סיפור לפעם אחרת.
הסטייק
לצורך הרוטב השתמשתי בחצי ספלון אספרסו של חומץ בלסמי סטנדרטי וכף ריבת תאנים של סן-דלפון (כן כן, זה דלפור).

מחממים מראש מחבת "צלעות" (מישהו מכיר שם אחר?), על אש גבוהה, ומטגנים לצריבה קלה מכל צד על מנת לכלוא את הנוזלים. לאחר הצריבה, יש לטגן כ-2 דקות כל צד על מנת להגיע לדרגת מדיום המומלצת. בגמר הטיגון יש למרוח את הרוטב על הסטייק. אני ממליץ בחום למרוח את הרוטב, ואז להפוך את הסטייק על המחבת כדי לקרמל מעט את הסוכרים שבריבה – אתם תודו לי אח"כ.
הפירה
לצורך הפירה השתמשתי בארבעה תפוחי אדמה אורגנים קטנים, בצל אחד, שלוש שיני שום, שליש כוס חלב וקוביית חמאה קטנה. חותכים את תפוחי האדמה השטופים היטב לקוביות, מרתיחים יחד עם הבצל והשום עד להתרכחות מספקת ומסננים. מכאן ואילך מדובר בעבודת מזלגות סיזיפית, או כל כלי אחר שתמצאו לנכון, תוך כדי הוספת החמאה והחלב.
הבירה
את הגולדסטר מומלץ להניח במקפיא תוך כדי הבישול לצינון מושלם.
